Blog Challenge: Day 24

Something you wish you could change:

Getting laid off sucked. I would've left this job at some point, but being forced to leave without any compensation, and having to leave behind all of the amazing perks I had here (and after a promotion) was really hard. I miss the people so, so much. It was easy, and fun, and within walking distance of my house. If I could change something, my work place would not have shut down. I would not have argued with the head of the company (who still holds his job) and watch people cry and yell over losing their jobs. It was hard. It was really hard.

Blog Challenge: Day 19

A picture and a letter:

Dear Turtle,
Why did you want to lay eggs on the side of the road? That's not safe. We had to put you back down near the creek where your babies belong. I hope they like it there because it was quite a hassle, what with you being a snapper. As Isaac poked and prodded to get you turned around, I didn't realize my cell phone dropped out of my pocket onto the gravel road. Two fire trucks drove by. Bye bye cell phone.
Silly turtle. I liked that phone.
Hope you're enjoying your new home,
T

Take some responsibility

I cannot believe what I have read in response to 13 teens being banned from their own Prom. It is pathetic to see some of their parents, friends, and classmates sticking up for them, claiming they were "punished" and "undeserving" of such a punishment.

It was a school sanctioned event. As such, all school rules are expected to be followed. Whether or not other kids are drinking at Prom or not, it is still against the rules. Whether or not your Mom gives you permission at 18 to have a few drinks at an after-party, it is still illegal. The legal drinking age is 19 and alcohol cannot be consumed at any school event. As for the transportation issues, the Principal did unfortunately make a last minute decision, but she has every right to do so. Again, the students knew the rules. There may very well have been others who had been drinking and managed not to "get caught" that night, but these 13 teens did get caught and need to own up to their wrongdoings.

To the poor Principal of QSS, I say thank you for doing your job. If I were her, I would not have let them in either. One of the girls that was banned says she had actually helped plan Prom. If anyone knew the rules, it should have been her. Students had been asked not to come in a large group via bus or limo, and were expected not to drink alcohol. Why then, can they not see the problem in showing up in a bus, under the influence of alcohol?

These parents should be embarrassed and ashamed of themselves. Rather than placing the blame on the Principal who was simply doing her job, these teens need to accept responsibility for their actions. The school owes these teens nothing, because the teens are the ones at fault. They want a full refund? Too bad, so sad. If you are not going to follow the rules - and obey the law - you are out that money and do not get to go to Prom. Life goes on. To say that their night was "devastating" is laughable. If Prom were so important to this group, they would have followed the rules in the first place.

A picture of something you want to do before you die: Travel Canada from coast-to-coast

Not this exact route, of course. I'd like to get up a little further North as well. I'd go right from Newfoundland to Vancouver Island, preferably through the middle of most provinces. Hit up some major cities, including all capitals. Now if only gas weren't so expensive.

It's a silly picture, but it meets the criteria. I don't want to imagine one second without either one.

Turkey burgers

Turkey Burgers
Servings: The recipe says 5 burgers but I made about 8 smaller ones
Time: 15 minutes? That's a guess. The original recipe is done on the oven and we BBQ'd.
Ease of difficulty: Easy, just time consuming to grate veggies
Source: Skinnytaste

  • 1.25 lbs lean ground turkey
  • 1 small zucchini, grated
  • 1/4 cup breadcrumbs
  • 1 clove garlic, grated
  • 1 tbsp red onion, grated
  • salt and fresh pepper
  • oil spray

In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties. Heat a large skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through. If grilling, clean grill well before cooking and spray with oil spray to prevent sticking.

We threw them on the BBQ and they turned out perfect. I put lettuce, pickles and mustard on mine.

Bacon-wrapped Beans

Yes, you read that right. What doesn't taste great wrapped in bacon?

Bacon-Wrapped Beans
Servings: 8 bundles (Give or take, depending on how many beans you have)
Time: 15-20 minutes
Ease of difficulty: Easy
Variations: I didn't have rice vinegar or kosher salt, so I tried it with white vinegar and table salt. No problem. I also made some with white onions instead of red.
Source: Our Best Bites

  • 1 lb fresh green beans, washed with the ends snapped off
  • 8 slices lean, bacon
  • 3 tbsp butter
  • 1 tbsp rice vinegar
  • 1 tbsp red onion, minced
  • 1 clove garlic, minced
  • 1/4 tsp kosher salt
Bring a large pot of lightly salted water to a boil. When the water is boiling, briefly boil (blanch) the beans for 2-3 minutes or until you start hearing a popping noise and the beans have turned bright green. Quickly drain and rinse in cold water until the beans have cooled. If you’re planning on completing the beans immediately, preheat the oven to 400 degrees F.

On a cookie sheet, divide the green beans evenly into 8 piles. Wrap each pile of beans with one slice of bacon and return to the baking sheet. When the oven is ready, place the pan in the oven and bake for 10-15 minutes or until the bacon is crisp and sizzling.

While the bundles are in the oven, melt the butter over medium-high heat in a small saucepan. When the butter is bubbly, add in the onions and garlic and saute for 2-3 minutes or until the onions are softened and fragrant. Reduce heat to low and add in vinegar, sugar, and salt. Remove from heat and set aside. When ready to serve, place bean bundles on a serving platter and drizzle with sauce. Serve immediately.
Officially our favourite side dish.
